1. Dham
Dham is a plate full of delicious dishes. In this you will get to taste the lentils, rajma, rice, curd, etc. Jaggery adds charm to this dish. Festivals and special occasions are considered incomplete without it. Its prevalence is more visible in Manali and Chamba and it is also called the staple food of Himachal Pradesh.
2. Tudkiya Bhat
This is a famous recipe of Himachal and whenever it comes to the food of Himachal Pradesh, the name of Tudkiya Bhaat comes first. You can easily see it in Chamba district. It is prepared by mixing rice, lentils, peas, potatoes, tomatoes, cardamom, lentils, sugar etc. It is specially served with desi ghee. People who have tasted it tell that there is no better dish in Chamba than this.
3. माद्रा (Madra)
You will easily find this dish in Chamba and Kangra districts of Himachal Pradesh. Soaked chickpeas or gram are mainly used in this dish. It is cooked well in oil. Various spices like clove, cinnamon, cardamom, cumin, coriander powder and turmeric powder enhance the taste of this dish.
4. Siddu
Siddu is the most liked dish mostly in Mandi, Kullu, Manali, and Shimla. It is a kind of roti made from wheat flour. A mixture of wheat and yeast is used to make it. After kneading the wheat with yeast, the dough is left for at least 4 to 5 hours. Generally, it is served with desi ghee dal and chutney.
5. Bhey
This is such a recipe that you can taste it in any corner of Himachal. It is eaten fiercely in the homes of the people there. It is prepared from the stem of Lotus. Before making, the stem of the lotus is cut thinly. Then it is cooked in ginger-garlic, onion and gram flour. This dish is a little spicy.
6. Chha Gosht
This is a very tasty mutton curry from Himachal. It is cooked in gravy of gram flour and curd. The taste of this dish is enhanced when it is prepared with cardamom, red chilli powder, coriander powder, bay leaves, asafoetida and ginger-garlic paste. You will find its name in the menu list of the local dhaba of Kullu.
7. बबरू (Babru)
Babru is an important sweet prepared on all auspicious occasions of Himachal. It is cooked by making a design on a mold using sugar. Wheat flour, mustard oil or refined oil, sugar, a glass of milk, baking powder are the special things used in this dish. If you are in Shimla, then you can make it a part of your plate.
8. Khatta
Like madra, this is another traditional hill dish of Himachal, which is sour in taste. It is usually served with rice. It is very popular in Kangra district.
