Where did samosa come from in India?
Samosa has a very old history. It came to India long ago from Iran, miles away. Its name in Persian was ‘sanbusak’, which became Samosa while coming to India. In many places it was also called Sambusa and Samusa. In Bihar and West Bengal it is called Singhada. This is because this water looks like the fruit water chestnut. The first mention of samosas is found in the writings of the 11th-century historian Abul-Fal Beyhaqi, who mentioned a similar salty cheese stuffed with minced meat and nuts in the court of Ghaznavi. Although no one knows when the triangular shape of the samosa was introduced, a similar dish was found in Iran. In the olden days, samosa reached India via Afghanistan with the migrants. By the time it reached India, many changes took place in it. Its shape also changed and the stuffing in samosas too. In places such as Tajikistan and Uzbekistan, dried fruits and fruit in samosas were replaced by goat and lamb meat, mixed with chopped onions.
